Recipe 12: Cottage Cheese and Oat Pancakes

This gluten-free recipe is high in protein and offer unique taste even without any topping.

Total Time: 20 minutes

Dry Ingredients:

• Oatmeal: 1/2 cup

• Protein powder: 1 scoop

• Brown sugar: 2 tablespoons

• Ground cinnamon: 1 teaspoon

• Baking powder: 1 teaspoon

Wet Ingredients:

• Banana: 1

• Eggs: 2

• Cottage cheese: 1/2 cup

• Vanilla extract: 1 teaspoon

• Water: as per your need

Directions:

Preheat your skillet or griddle over medium flame.

Blend baking powder, cinnamon, brown sugar, protein powder and oatmeal together in one blender to make a fine mixture. Transfer this mixture into a mixing bowl.

Blend vanilla extract, cottage cheese, eggs and banana in one blender to make a smooth mixture and pour in dry ingredients. Mix them well to get a thick batter. Mix water in the mixture to make it slightly thin, as per your needs.

Ladle almost ½ cup batter over the skillet for one pancake and spread this mixture across this hot pan. Once the bottom turned golden brown for approximately 3 – 5 minutes and you will notice small bubbles on the top, flip to other side and cook on low heat to cook this side for 3 - 5 minutes again. Serve hot.
